Ingredients
1/2poundfresh green beans, ends trimmed
1/4teaspoonsalt
1tablespoonextra-virgin olive oil
1teaspoonapple cider vinegar
1/2teaspoonDijon mustard
1/8teaspoonpepper
2green onions, thinly sliced (green parts only)
1/4cupchopped walnuts, lightly toasted
1/4cupcrumbled blue cheese
Instructions
Place the green beans and enough water to cover in a large saucepan. Add the salt and bring to a boil. Reduce heat, cover and simmer about 3 to 4 minutes, just until the beans are crisp-tender. Drain beans and then place in a large bowl of ice water. Let sit in ice water for a few minutes. Drain again and transfer to a large serving bowl. Blot with paper towels to dry.
In a small bowl, whisk together the oil, vinegar, Dijon and pepper. Pour over the green beans. Add the green onions, walnuts and blue cheese and toss. Serve.
