Dark Chocolate Bunny Munch

Ingredients

  • 7 cups Original SkinnyPop Popcorn
  • 1 1/2 cups mini pretzel twists (gluten-free if needed)
  • 1 cup colored flavored marshmallows
  • 1/2 cup roasted salted almonds
  • 1/2 cup roasted salted peanuts
  • 4 oz. dark chocolate chopped (or 2/3 cup dark chocolate chips)
  • 2 tablespoons spring/Easter sprinkles

Instructions

  • Line a large, rimmed cookie sheet with parchment paper. Spread the popcorn evenly over the sheet. Sprinkle evenly with the pretzels, marshmallows, almonds and peanuts.
  • Place the dark chocolate in a medium, microwave-safe bowl. Microwave on high 30 seconds. Stir. Microwave on high 20 seconds more and then stir. If chocolate is still not completely melted, microwave another 20 seconds and stir again.
  • Drizzle the chocolate over the mixture on the cookie sheet. Scatter the sprinkles over the top. Do not stir! Let chocolate harden and then break the mixture into pieces. Store in an air-tight container at room temp.

Notes

Since the marshmallows and sprinkles have not been tested for FODMAP content, this is not necessarily a low-FODMAP recipe and may not be appropriate for the elimination phase of the diet.
