Fresh & Lemony Tuna Salad
This low FODMAP Fresh & Lemony Tuna salad tosses lettuce greens, tomatoes, olives, and Parmesan cheese together for a tasty low-carb dish.

- 1/4 cup fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 1/4 teaspoon sea salt
- 4 cups romaine hearts, torn
- 4 cups baby spinach, torn
- 1 cup grape or cherry tomatoes, halved
- 1/2 cup sliced black olives
- 2 (5-oz.) cans tuna, drained and flaked
- 1/4 cup shredded Parmesan cheese
- fresh ground black pepper
In small bowl, prepare the dressing by whisking together the lemon juice, olive oil and salt.
Combine the remaining ingredients in a large bowl. Drizzle with the dressing and toss gently. Season to taste with fresh ground black pepper. Serve.
