Low FODMAP & Vegan Tofu Feta

Tofu is combined with a mixture of nutritional yeast, apple cider vinegar, and lemon juice to make a vegan feta cheese substitute.

Ingredients

  • 16 oz. firm or extra-firm tofu, pressed and drained
  • 3 tablespoons nutritional yeast
  • 3 tablespoons lemon juice
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon salt

Instructions

  • Crumble the tofu in a large bowl. In a small bowl, whisk together the nutritional yeast, lemon juice, vinegar, and salt. Drizzle over top of the tofu and toss gently to combine.
