Ingredients
1/2cupmayonnaise(I use Hellmann's Light)
1/4cupgranulated sugar
2tablespoonsapple cider vinegar
2tablespoonslemon juice
1/2teaspoonsalt
6cupsshredded cabbage*(14 oz. bag)
2cupsshredded carrots*
Instructions
In a very large bowl, combine the mayo, sugar, vinegar, lemon juice, and salt. Whisk until the sugar dissolves.
Add the cabbage and carrots to the bowl and toss with dressing until coated. Cover and refrigerate until ready to serve (I actually like to make this the day before).
Notes
* Instead of the cabbage and carrots, you can use a 16 oz. bag of "Coleslaw Mix" that includes green cabbage, red cabbage, and carrots.
