Ingredients

  • 1/3 cup light mayonnaise
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 1 pint cherry or grape tomatoes, halved
  • 2 scallions, thinly sliced (green parts only)
  • 2 tablespoons fresh chopped parsley

Instructions

  • In a medium bowl, whisk together the mayo, vinegar, Dijon, salt and pepper. Add the tomatoes, scallions and parsley and toss to combine.
  • This salad tastes best chilled several hours before serving.

Notes

* Please keep in mind that a low-FODMAP serving size of cherry tomatoes is 5 tomatoes, so if you are on the elimination phase of the diet, only 5 tomatoes (or 10 halves) should be consumed in a sitting.
