Place chicken in a large saucepan and add water or broth/stock to cover the chicken. Bring to a boil, reduce heat and simmer, partially covered, for 10 minutes.
Remove pan from heat, completely cover and let stand for 15 to 20 minutes, or until chicken registers an internal temperature of 165 degrees F.
Remove chicken from pan and place on a cutting board to let cool. The chicken will be a bit easier to cut after it has cooled a while. Slice or chop chicken and place in the refrigerator to chill and use in your favorite recipes.
