  • Place chicken in a large saucepan and add water or broth/stock to cover the chicken. Bring to a boil, reduce heat and simmer, partially covered, for 10 minutes.
  • Remove pan from heat, completely cover and let stand for 15 to 20 minutes, or until chicken registers an internal temperature of 165 degrees F.
  • Remove chicken from pan and place on a cutting board to let cool. The chicken will be a bit easier to cut after it has cooled a while. Slice or chop chicken and place in the refrigerator to chill and use in your favorite recipes.
