- 3 ripe bananas, mashed
- 1 1/4 cups rolled oats (gluten-free if needed)
- 1/2 cup unsweetened shredded coconut
- 1/2 cup chopped walnuts
- 1/4 cup Enjoy Life Dairy-Free Mini Chocolate Chips
- 1 tablespoon ground chia seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
Place all ingredients in a large bowl. Stir until thoroughly combined.
Drop by heaping tablespoons onto prepared cookie sheets. Bake 16 to 18 minutes, or until lightly browned around bottom edges.
