Ingredients

  • 3 ripe bananas, mashed
  • 1 1/4 cups rolled oats (gluten-free if needed)
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped walnuts
  • 1/4 cup Enjoy Life Dairy-Free Mini Chocolate Chips
  • 1 tablespoon ground chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.
  • Place all ingredients in a large bowl. Stir until thoroughly combined.
  • Drop by heaping tablespoons onto prepared cookie sheets. Bake 16 to 18 minutes, or until lightly browned around bottom edges.
