I make this side dish all the time. It goes well with so many main dishes. It’s easy too. Just throw some rice and herbs in a pot with broth and you got it. Herbs are a very important part of cooking for IBS and Fructose Malabsorption. I suggest you get to know herbs very well. They impart so much wonderful flavor without upsetting our delicate tummies. My favorites are rosemary, thyme, basil and oregano. Otherwise, have fun experimenting with herbs. I like to use Italian herb seasoning, which is blend of the herbs I listed above. Buy it in bulk, it’s so cheap!
Parmesan Herb Rice
Ingredients
- 1 tablespoon olive oil
- 1 cup long grain white rice
- 2 cups Low-FODMAP Chicken Broth or Stock (unsalted)
- 1 teaspoon Italian herb seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon ground black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large saucepan over medium heat. Add rice and saute until lightly browned. (This part is optional. Sometimes I skip the browning if I'm pressed for time.)
- Add chicken broth, Italian herbs, salt and pepper.
- Bring to a boil, reduce heat, cover and simmer about 15 to 20 minutes, or until rice is tender and broth is absorbed.
- Stir in Parmesan cheese and serve.
