So it’s spring now. As usual, Minnesota did not get the memo. At least it isn’t below zero anymore. Today was in the 30’s and it felt tolerable. It’s pretty sad when it’s the first couple days of spring and we are happy it’s above zero.
Well, we can pretend it really is spring, can’t we? A good way to is to make refreshing mojitos. Mojitos, of course, are not healthy or allowed on any special diet, but sometimes you just need a drink. Or a pitcher of drinks. Something to trick your mind into thinking it’s spring. Or at least that spring is coming.
This recipe comes from Food.com and I followed it to a tee. It’s very highly rated and I can see why! It’s recommended to use fresh lime juice and fresh mint. This recipe is an excellent reason to grow your own mint. It’s maybe a good thing I have a black thumb, otherwise I’d grow mint and be making this drink waaaaay too often.
