I don’t really like lunch. It’s that time of day when I’m hungry, but I can’t decide what to eat. Nothing sounds really all that good, but I have to eat! Well, today I threw this salad together and it was delicious, so I thought I’d share. I would have loved to put some goat cheese on, but alas, I am still dairy-free, for the time being.
I cook up chicken breasts (either sauteed or grilled) and freeze in individual portions. Then I can just pop one out of the freezer and thaw it in the microwave for my lunches. It’s kind of like those Tyson Grilled & Ready chicken breast strips, but without all of unnecessary extra ingredients, like salt and sugar.
Anyways, here’s my recipe. It’s nothing precise, but it’s really tasty, healthy and low-FODMAP.
Balsamic Chicken Salad with Strawberries
Low-FODMAP, Gluten-Free, Diary-Free, Egg-Free
serves 1
Ingredients
1 plate of baby mixed greens
1 handful fresh strawberries, cup up
a couple of tablespoons dry toasted sunflower seeds
1 cooked chicken breast, cut up
Maple Balsamic Vinaigrette
Directions
Mix it all up and eat!
