Low FODMAP Cheesy “Garlic” Bread is made with a mixture of butter, cheese, and garlic-infused oil slathered on sourdough or gluten-free baguettes.
I know I’ve said before how much I’ve always loves spaghetti dinner. But here’s the truth: my favorite part is the garlic bread! Garlic bread is everything. Which is why I was so happy to figure out a way to make it low FODMAP.
Sourdough bread, although not gluten-free, is considered low FODMAP. The fermentation process breaks down the fructans in the wheat flour. You can read more about this on the Monash FODMPAP blog. I’m lucky enough to find these take and bake sourdough baguettes in the bakery at HyVee grocery store (see photo below). I know not everyone lives near a HyVee since they are located mainly in the Midwest, so another option is to find or make gluten-free French bread. I like to make these ahead of time and freeze them before baking as a part of meal-prepping. Then all I have to do is pop a foil packet out of the freezer and into the oven. If baking these from frozen, it usually takes about 20 minutes to bake. This bread goes perfectly with my Low-FODMAP Spaghetti Bolognese recipe. The bolognese recipe makes a big batch, so I freeze servings of that as well. It makes for a really easy weeknight meal when I don’t feel like cooking!
What makes Cheesy “Garlic” Bread low FODMAP?
- Using sourdough or gluten-free baguettes.
- Using garlic-infused oil gives the flavor of garlic without the fructans.
- Parmesan cheese is a hard cheese, which is naturally low in lactose.
- Butter is very low in lactose as well. (Please be advised that foods high in fat consumed in excess can affect gut motility.)
Low FODMAP Cheesy “Garlic” Bread
Ingredients
- 2 small loaves sourdough baguettes or Gluten-Free French Bread (see note)
- 1/3 cup butter, softened (or butter spread)
- ¼ cup grated Parmesan Cheese
- 1 Tablespoon FODY Garlic Infused Oil
- Parsley (optional)
Instructions
- Preheat oven to 400 degrees F.
- Cut bread diagonally into 1” slices. In a small bowl, blend together the butter, Parmesan cheese, and garlic infused oil. Lightly spread butter mixture onto both sides of each slice of bread. Reassemble loaves of bread and wrap each in aluminum foil.
- Bake 8 to 10 minutes, or until butter and cheese is melted. (If using “take and bake” sourdough bread, you might want to unwrap the bread and continue to bake a few more minutes until crusty and golden brown.)
