My favorite kind of recipes are simple, easy, and delicious. And really, who doesn’t want that in a recipe? I really like recipes that come together quickly and then bake in the oven. Either so I can put my feet up or, depending on how ambitious I feel, make some nice side dishes while the main dish bakes in the oven. This Low FODMAP Baked Bruschetta Chicken definitely falls into that category of recipes. But first, let’s talk about another love of mine, reading.

What I’m Reading

Sea of Tranquility

I haven’t been working on my blog much this past year, but I have been reading a lot. I’ve read some books lately that were so enjoyable I wanted to share. The first book is Sea of Tranquility by Emily St. John Mandel. I read St. John Mandel’s book The Glass Hotel and thought it was pretty good, but Sea of Tranquility was even better. I’ve been fascinated with time travel since I first saw the movie Back to the Future as a child and then later learned about the theory of relativity and paradoxes. This novel adds a whole new level of what time travel may mean and kind of blew my mind. I don’t want to give too much away, but this book kept me more captivated than I’ve been in a long time. Five stars.

Project Hail Mary

Sea of Tranquility awakened the inner science fiction nerd in me that I haven’t seen since I was in high school. I would stay up late on Sunday nights to watch Star Trek: The Next Generation after the local news with my dad. Jean-Luc Picard was my hero. So the next book I set out to read was Project Hail Mary by Andy Weir. The Martian (based on the book by Weir) is one of my favorite movies and I rewatched it again recently on TV. It inspired me to see what else he has written, with Project Hail Mary being his most recent.

I don’t want to say much about this novel because it really is best to just go into the book completely blind. I wanted so much to talk to husband about it as I was reading, but I didn’t want to spoil it for him, so I kept my mouth zipped until he read it. The book is such a wild ride it really piqued my imagination. If you like science, then you will love this book. Five stars.

Lessons in Chemistry

Speaking of science, the next book I would like to recommend is Lessons in Chemistry by Bonnie Garmus. This bright, witty novel takes place in the early 1960’s and features a brilliant woman who finds herself the star of a cooking show. Having just watched the series Julia on HBO about Julia Child, I saw some definite parallels between the two. Both deal with the uncomfortable intersection of feminism and women’s “traditional” work. I also love a book that treats a dog as an anthropomorphized character, which Lessons in Chemistry does with a dog named Six-thirty. Four stars.

The Recipe

Low FODMAP Baked Bruschetta Chicken features chicken breasts seasoned with herbs and spices, and topped with chopped tomatoes and cheese and baked in the oven. The most difficult part of the recipe is probably cutting the chicken breasts into thin fillets. In some grocery stores, such as Aldi, you can purchase chicken breast already cut into thin fillets. I remember when I first started cooking for my husband and myself just out of college, when chicken breasts weren’t so huge. You could buy a package of four chicken breasts, each the perfect size for a single serving. Then after a while, packages started coming with only three chicken breasts. Now they are so big, two chicken breasts is a pound or more! So the way I deal with it is to cut each breast into thin fillets. It’s not too difficult to do with some practice.

Store-Bought is Fine

I wanted to get this recipe posted last month when tomatoes were in season and bursting from people’s gardens, but I didn’t quite make that deadline. It really doesn’t matter when you can get fresh tomatoes year round in the grocery store. I don’t have a garden, but I’ve gone through phases of having basil plants in the house (now not being one of those times, however). Fresh basil sprinkled on top makes this recipe really good, but honestly, the dried basil in the chicken seasoning is delicious enough. So if you are like me and buy tomatoes and dried basil from the store, you are golden. Enjoy!

How to Make Baked Bruschetta Chicken

  1. Cut chicken breasts into thin fillets

    Slice through the thickness of each chicken breast to make 4 thin fillets.slicing chicken breasts into fillets

  2. Combine seasonings

    Combine the garlic oil, lemon juice, spices, and herbs in a large bowl.combine seasonings for bruschetta chicken

  3. Coat chicken in seasonings

    Add the chicken breast fillets to the bowl and toss to coat in the seasonings.toss chicken in seasonings

  4. Top with chopped tomatoes

    Place the seasoned chicken breasts in prepared baking pan and sprinkle with chopped tomatoes.top chicken with tomatoes

  5. Cover chicken and bake

    Cover pan tightly with aluminum foil and bake at 425 degrees F for 20 minutes.cover chicken and bake

  6. Top with cheese

    Sprinkle mozzarella cheese evenly over top and bake (uncovered) until chicken is done and cheese is melted and starting to lightly brown, about 5 to 10 minutes more.top chicken with cheese

  7. Enjoy!

Ingredients

  • 2 boneless, skinless chicken breasts (about 1 to 1-1/4 lbs.)
  • 1 tablespoon Fody Garlic Infused Oil
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 Roma tomatoes, chopped
  • 1/2 cup shredded mozzarella cheese
  • chopped fresh basil or parsley for garnish, if desired

Instructions

  • Preheat oven to 425 degrees F. Lightly coat a 13” x 9” baking pan with cooking spray.
  • Slice through the thickness of each chicken breast to make 4 thin fillets.
  • In a large bowl, combine the garlic oil, lemon juice, basil, paprika, oregano, salt, and pepper. Add the chicken breast fillets and toss gently to coat in the spice mixture.
  • Place chicken breasts evenly in the prepared baking pan. Sprinkle chopped tomatoes evenly over top. Cover pan tightly with aluminum foil and bake 20 minutes.
  • Uncover and sprinkle chicken evenly with the mozzarella cheese. Bake, uncovered, 5 to 10 minutes more, or until chicken reaches an internal temperature of 165 degrees F and cheese is melted and starting to lightly brown.
  • Sprinkle with fresh basil or parsley if desired and serve.
