This dish is perfect for people who have IBS. It’s also perfect for people who don’t! I ate it quite frequently when I was on my elimination diet. I decided to make it again recently. I don’t know why I don’t make it more often, as it’s delicious, gluten-free and low-carb. It’s adapted from a recipe I found on allrecipes. I just use boneless, skinless chicken breasts and scale down the rest of the ingredients for a more appropriate four servings.
I mostly make this recipe for my husband and me, but I have also made it for company. I remember I once made it when my parents came to visit back when we still lived in Minnesota. My sister and her family came to, so we had a crowd. This was the perfect main dish to make because it is so easy. I doubled the recipe and the chicken baked in the oven while I put the finishing touches on the side dishes.
To make this recipe, all you have to do is dip boneless, skinless chicken breasts in melted butter. Next, dip the chicken breasts in a mixture of grated Parmesan cheese and herbs. After that, simply bake in the oven. Thirty minutes later you will have juicy, flavorful chicken. I serve this with mashed potatoes, salads, and a Sauvignon Blanc. Low FODMAP Parmesan Herb Chicken is incredibly easy and yummy. Bon appetite!

Low FODMAP Parmesan Herb Chicken
Ingredients
- 2/3 cup grated Parmesan cheese
- 1 tablespoon minced fresh parsley (or 2 tsp. dried)
- 2 teaspoons dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 boneless, skinless chicken breasts (pounded to an even thinness)
- 3 Tbsp. butter or margarine, melted
Instructions
- Preheat oven to 400° F.
- In a shallow dish, combine the first five ingredients. Dip chicken in butter, then coat with Parmesan mixture. Place in a greased 13″ x 9” pan. Sprinkle any remaining cheese on top, then drizzle any remaining butter.
- Bake, uncovered, for 25-30 minutes or until the juices run clear.

Thats only parmesan cheese making it look like that; I don't need any bread crumbs?
Nope! No breadcrumbs. I used the Parmesan cheese out of the green can, so that's why it looks kind of like breadcrumbs.
