There are times when I wonder what the content of my blog should be. Should it be only recipes I’ve made up? Should it be recipes I’ve made that were written by other people? Or both? I think I’ve decided it should be both. I love taking photos of food, whether it’s my own recipe or one written by someone else. It just has to be delicious food. So when I find a great recipe, I know I want to photograph it and share it with my readers. I want my blog to be a reflection of my life. Sometimes I make up my own recipes, sometimes I “tweak” recipes and make them my own, and sometimes I make a recipe as it’s written by someone else and it’s perfect.
This is one of those recipes. Baked Mustard Lime Chicken by Elana at Elana’s Pantry. In fact, most of the recipes at her site are perfect the way they are written. Since going wheat-free and moderate low-carb, her site and recipes have been a life-saver for me. At my house it’s “Elana says this….,” “This is one of Elana’s recipes,” and ” I can’t wait to try this recipe from Elana.” My husband probably thinks I’m obsessed with her site, and maybe I am, but her recipes are so healthy and really on the cutting edge of nutrition. This chicken was so easy to make and delicious. I served it with cilantro-lime rice and a spinach salad with avocado dressing. I highly recommend this recipe!
I have had those thoughts about my own blog as well, and in the end, I realized that I just wanted to share recipes I was excited about, just like you!
I baked some "Paleo Bread" from Elana's website this last weekend. Turned out really good. There are a few of your recipes on here Brooke and I are going to try too. Great blog!
