Peanut Butter Marshmallow Fudge

I love having a bite of chocolate at the end of a meal. Most of the time it’s just a square of high-quality dark chocolate, but sometimes I like to make something myself. Like this fudge recipe. It has become a favorite of mine because it’s so easy and only requires three ingredients, all three of which I usually keep stocked in my pantry at all times.


You will need chocolate chips, peanut butter and marshmallows. That’s it. I like that I can make this dairy-free by using Enjoy Life chocolate chips. You can use either creamy or chunky peanut butter, but I prefer creamy.

I have a slight obsession with marshmallows. It started when I was young. My mom used to keep the marshmallows and raisins right next to each other in the cupboard, so one of my favorite snacks used to be, you guessed it, raisins and marshmallows. Holy sugar! I would put a little layer of raisins in the bottom of one of my favorite lavender plastic coffee cups, pile marshmallows on top, then carry it off to enjoy somewhere while devouring a book. As a credit to my mom, she didn’t let me have that snack all the time. Just every once in a while as a treat.

Don’t marshmallows smell fantastic too? I wish I could use a bag of marshmallows to sleep on as my pillow at night. Did I just say that out loud? Well, If you love marshmallows as much as I do, you will love this 3-Ingredient Peanut Butter Marshmallow Fudge.

Peanut Butter Marshmallow Fudge

Just three ingredients make up this super easy fudge: chocolate chips, peanut butter, and marshmallows.

Ingredients

  • 1 cup peanut butter (creamy or chunky)
  • 12 oz. chocolate chips*
  • 4 cups mini marshmallows

Instructions

  • Line an 8″ x 8″ pan with foil, leaving some overhang on each side as handles to lift the fudge out later. Spray the foil lightly with cooking spray.
  • In a large sauce pan, melt the peanut butter and chocolate chips together over low heat. Stir until all of the chocolate is melted and combined with the peanut butter.
  • Stir in the marshmallows. You don’t want the marshmallows to melt too much, so stir them in just until each marshmallow is coated in the chocolate mixture.
  • Pour into the prepared pan and spread out evenly. Cover and refrigerate until firm.
  • Lift fudge out of pan using the foil handles and cut into pieces. Store fudge in the refrigerator.

Notes

*To make these dairy-free, I use Enjoy Life Mini Chocolate Chips. Just an FYI: this brand comes in 10 oz. bags. If using this brand, you will need one bag, plus 2 more ounces from another bag of chocolate chips.

  3. I am very interested to make this. Can I use 100% cocoa powder instead of the choco chips? Also, should I wait awhile before mixing the marshmallow once the choco and peanut has been incorporated, just to make sure the marshmallow will not melt? thank you for sharing.

     
  4. The fudge gets its sweetness from the chocolate chips, so I would not recommend using cocoa powder. It's not necessary to wait to to stir the marshmallows in. Just make sure you don't stir the mixture too much after adding them.

  7. How many does that usually serve?

     
  8. It depends on how big you cut the fudge, but I usually cut the pan into about 16 pieces.

     
  9. Around how long does it take to cool enough to cut and serve? Also, can I put it in the freezer to speed it up?

     
  10. It usually takes a couple of hours to firm up. I have put this in the freezer to help speed up the process and it seemed to work.

    Just made this, it’s in the fridge. Next time I might not add the marshmallows (which I hate, but family loves)but add nuts.
