It’s pretty difficult to find packaged granola that is low-FODMAP, so I was happy to try out Casa de Sante’s Granola. Their granola is a little different because it is savory. The plain variety would be good for breakfast because it is a little bit sweeter. You could eat it with some lactose-free yogurt or almond milk and berries. The other varieties are great for snacking right out of the package, like you would with snack nuts. I enjoyed all of the varieties. They are all gluten-free, oat-free, and come in these cute little snack packs.
When I tried the granola, I immediately thought it would be good in a salad for a nice crunch. The Indian Spicy Hot and Golden Turmeric Granola inspired this recipe for curry chicken salad. I personally love the spicy hot, but if spicy isn’t your thing, the turmeric is also very good.
The spiciness of the granola is toned down by the sweetness of the dried cranberries and the coolness of the water chestnuts. Both my husband and I love this salad and have been enjoying it for lunch lately. We like to eat it with a fork along side some baked potato chips and fruit. It’s also very good on a rice cake if you are looking for more of a sandwich-type lunch!
Curry Chicken Salad with Cranberries and Spicy Hot Granola
Ingredients
- 2 cups chopped cooked chicken (click to see my recipe for Poached Chicken Breasts)
- 2 scallions, thinly sliced (green parts only)
- 1 - 8 oz. can diced water chestnuts, drained
- 1 - 1.6 oz. package Indian Spicy Hot Granola (or Golden Turmeric Granola) from Casa de Sante (about 1/2 cup)
- 1 rib celery, diced
- 1/4 cup sweetened dried cranberries
- 1/2 cup light mayonnaise
- 1 teaspoon curry powder
- 1 teaspoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions
- In a large bowl, toss together the chicken, scallions, water chestnuts, granola, celery and cranberries. In a small bowl, whisk together the mayonnaise, curry powder, lime juice, salt and pepper.
- Add the mayonnaise mixture to the chicken mixture and stir until thoroughly combined. Chill and serve.
