I wasn’t sure I would get a post up in time this week since I’ve been feeling a bit off lately. It all started when I went up to Minnesota to visit my sister’s family for the holiday weekend. Even though I hardly spent much time outside, I ended up getting my feet and ankles all bit up by mosquitoes. They are the state bird, after all, so I guess I should have expected it. I lived in Minnesota for 13 years though and never got bit this bad! Well, by the time I got home my ankles were swollen to the size of oranges. I ended up taking some Benadryl because I was so uncomfortable. I’ve been drowsy and sleepy since. Although my ankles are back to normal size, they are still itchy.


Despite the mosquito bites, I did have fun with my sister and her family. It was sisters weekend, so we went out one night and stayed at a hotel with some of my sister’s friends. We stayed up late drinking too much and laughing our heads off. We also went clothes shopping and had lots of chatty meals together. I got to go shopping with my nieces for back-to-school outfits too. I can’t believe the cute clothes they make for kids these days. They both looked adorable.

The Recipe

I didn’t want you to wait too long for this Low FODMAP Bacon Cheeseburger Macaroni recipe, because it is a good one. I love a hearty casserole-type dish like this one. It’s easy to make and is so filling. I adapted it from Food.com and it turned out so well, I didn’t want to waste any time in sharing it with you. You will love it! My husband and I mostly eat vegetarian during the day. Then for dinner we usually eat fish or chicken, only eating beef a couple times a month. As a result, I don’t have that many beef recipes on my blog. Hopefully this recipe will help fill in that gap.

Low FODMAP Bacon Cheeseburger Macaroni

Ingredients

  • 8 oz. gluten-free elbow pasta (I like Tinkyada)
  • 4 slices bacon, chopped
  • 1 lb. ground beef
  • 2 scallions, green parts only, thinly sliced
  • 1 – 14.5 oz. can diced tomatoes
  • ½ cup water
  • ¼ cup FODY Ketchup
  • 2 tablespoon yellow prepared mustard (check ingredients label for FODMAPs)
  • 1 teaspoon ancho chili powder (if tolerated)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

Instructions

  • Prepare macaroni according to package directions. Drain into a colander and rinse with cold water.
  • While macaroni is cooking, sauté bacon in a large skillet over medium heat until crispy. Add the beef and scallions. Brown and crumble beef until no longer pink. Transfer to a paper towel lined plate to drain grease. Transfer back into skillet and add tomatoes, water, ketchup, mustard, chili powder, salt, and pepper. Bring to a simmer and cook about five minutes.
  • Gently fold in the rinsed macaroni and cheese. Continue to simmer until cheese is melted and macaroni is heated through, about five minutes more. Serve.

    This recipe was really good and quick to make. My 15 year old son is on low FODMAP and this can be a great addition in our meal rotation. I paired it with fresh steamed green beans and an orange for dessert. Thanks!

    At first, this recipe combination didn’t sound like it would taste very good. I took a chance because all Dianne’s recipes I have tried have been a hit with my family. This recipe didn’t disappoint. This is a great recipe. Good for pot luck dinners too!

    This was very yummy. It could have used pickles though ; )
    I used tomato paste instead of ketchup, and smoked paprika instead of chili powder b/c I didn’t have any.
    I also added a little coconut sugar.
