I feel so privileged and thankful that we are able to get our groceries delivered during the pandemic. However, I do miss doing my own shopping. Many farmer’s markets haven’t even been open this summer because of the pandemic. As a result, consumers have been concerned about how to get quality local produce. This box arrived on my doorstep and I was pleasantly surprised. I found a variety of quality produce carefully packaged to retain freshness. There is plenty of padding to prevent damage and ice packs to keep the produce cool, even in the heat of summer. The contents change each week and may vary depending on the season and availability.
I received the Only Organic Small Box (affiliate link) with Fruits and Veggies. I immediately began thinking of what I could make with the items. I mashed the avocado with some lemon juice and salt and used it as a spread for sandwiches made with sourdough bread. The cherry tomatoes went in a quinoa salad. The rainbow carrots and green beans make up the dish I’m sharing with you today.
The Recipe
I think the best way to cook just about any vegetable is to roast it. Roasting adds so much flavor to this Thyme Roasted Carrots and Green Beans dish. The carrots get caramelized. The green beans get nice and tender (which is how I like them). The thyme adds a nice pop of flavor and I love how pretty the rainbow carrots are too. This is the perfect side dish for the end of summer and goes with any meal.

Low FODMAP Thyme Roasted Green Beans and Carrots
Ingredients
- 1 lb. carrots, about 3 large, peeled and cut into sticks (roughly the same size as the green beans)
- 1/2 lb. green beans, trimmed
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon coarse salt
- 1/4 teaspoon coarse ground black pepper
Instructions
- Preheat oven to 425 degrees F. Coat a large rimmed baking sheet with cooking spray.
- In a large bowl, toss the carrots and green beans with the oil, thyme, salt, and pepper.
- Spread out in one layer on the prepared baking sheet.
- Bake 15 to 20 minutes, stirring half-way through, until browned and tender.
