Low FODMAP Skillet Lasagna

I made this recipe from Food.com a couple of years ago and knew it had potential to be a delicious low FODMAP recipe. Here is my version. It is garlic-free, onion-free, and gluten-free. Ricotta cheese is low in lactose in small servings, so I reduced the amount to be more tolerable for those with IBS or lactose intolerance. Parmesan cheese and mozzarella cheese (both hard cheeses) are low-lactose in small serving sizes as well, as indicated in this recipe. Although there are three types of cheeses in this recipe, the total amount is hopefully not too much to overload the digestive system.

You will want a large skillet that comes with a lid for this recipe. I really like the skillet from my T-Fal Cookwear Set. The only special ingredient you’ll need for this recipe is gluten-free lasagna noodles. I like Tinkyada Brown Rice Lasagna Noodles, which you can usually find in the health food section of the grocery store or from Amazon. Another great option is Jovial Brown Rice Lasagna Noodles (also from Amazon). Affiliate links: as an Amazon Associate, I earn from qualifying purchases.

I love lasagna, but I’m usually not fond of all the work and time that goes into creating the layers. Don’t get me wrong, real lasagna is amazing and totally worth the effort, but some days you just want something that’s quick and easy to make. If you are looking for a recipe like that, then you will love this Low FODMAP Skillet Lasagna Recipe!

This was divine. I’m a coeliac so this recipe was an extra winner. My non coeliac family members loved it too. It’s certainly easier to make than tradiroonal lasagna. Thanks for a wonderful recipe.
